SHORT PROJECT DESCRIPTION

The aim of OrKIFood is to investigate and discuss
possibilities for funding of a major project, and
eventually prepare an application for Innovation
Fund Denmark.
We previously found a new potential of using kale to
benefit the prevention and management of type 2
diabetes (T2D). Thus in OrKIFood we further
investigated and discussed possibilities of
formulating functional kale ingredient into daily foods
for T2D prevention and management. During 3
months project time, all partners fully discussed
details of a major project, which involving kale
ingredient process optimization, bioactive
constituents identification, human intervention
studies, food products development, marketing
strategy, and perspectives for food industry, T2D
patients and pre-diabetic people. Finally, an
application for Grand solution and an application for
Industrial postdoc. were submitted to Innovation
Fund Denmark during project time, and an
application for Future Food Innovation was
submitted 6 months after project ends.
With the knowledge generated from these projects,
a new food product based on kale will be developed
to benefit the prevention and management of T2D.
The scientific data obtained in the projects will
support and guide the use of the food product in
T2D patients and its marketing and sales.
