Unlike animal-based protein, which has been research for decades, there is currently a lack in understanding the deteriorating processes in these new plant-based protein resources. However, this is a time-consuming, specialized and lab-heavy task. This cross-disciplinary projects sets out to adress this gap in knowledge through a unique combination of multilevel data acquisition through cutting-edge mass-spectrometry and data analysis using tailored visual analytics. The continuous development in separation techniques and mass spectrometry have resulted in a major advancement in data collection from food proteomics with new opportunities in data utilization. The multifaceted data obtained constitutes a highly interesting data science problem to which no solution exists so far. Therefore, the developed semi-automatic visual analytics pipeline developed in this project has the potential to significantly shorten the data analysis time and increase our understanding of deteriorating processes in food products.
